I currently have it prompting for user authentication, but I didn't see it write which user auth'd in the smsts.log

It will show under the UI++.log that is created. Under the XAuthenticatedUser variable.

After the PC is reimaged I can't find the UI++.log

Have you checked the Windows\CCM\Logs folder?

Yes, in the c:\windows\ccm\logs the smsts.log file is there but no ui++.log

I am re-partition the disk... don't know if thats why its getting lost? Maybe there would be a way to copy this log off to a remote path with the %OSDComputerName% as a variable for the log name or something?

Are you running UI++ in Windows as the first step in the TS and then rebooting to WinPE at which point you are formatting and partitioning the disks?
